Carob

Carob Banana Cupcakes (vegan)
1/2 cup pure maple syrup
1/3 cup safflower oil
1 tsp vanilla extract
1 large ripe banana, mashed well
1 cup wholemeal plain flour or spelt flour
1 tsp baking powder
1/4 cup carob powder
1/4 tsp sea salt
1/4 cup soy milk

Preheat oven to 350*
Combine oil, vanilla and maple syrup in a large bowl, mix well. Add banana, stirring well to combine. In a separate bowl, combine flour, carob powder, baking powder, and salt, stirring well with a whisk. Add flour mixture to banana mixture alternately with 1/4 cup soy milk.  Mix gently after each addition, but be careful not to over mix.
Spoon the batter into 8 muffin cups lined with paper liners. Bake for 20 minutes or until cupcakes spring back easily when touched lightly in the centre.  Allow to cool and frost if desired.


Carob No-Bakes
2 cups of carob chips
½ cup pure maple syrup (or honey)
2 Tablespoons of milk
4 Tbsp butter
3 cups oatmeal
½ cup chopped nuts (walnuts or pecans are great)
Grease an 8x8 cake pan with butter; glass is preferable for cutting and removing the bars later. Melt the following together slowly in a sauce pan (double boiler is best): carob chips, honey or syrup, milk, butter.
Put the oatmeal in a large mixing bowl. When the wet ingredients are melted and stirred together, add the mix to the oats. Then the nuts. Mix well. Press into a greased pan. Cut into squares while still warm. Cover with plastic wrap and refrigerate until firm. This is one of my unique healthy snack recipes – and is still one of the favorites of my grown kids. They ask me to make it every Christmas.

Chilled Carob Cream Pie
Pie shell
3/8 cup of carob powder
8 oz cream cheese
3/8 cup honey
1 cup Half-and-Half
1 Tablespoon vanilla
1/2 cup water
I package of gelatin
Blend everything together except the gelatin and water. Prepare the gelatin according to instructions. Basically, in a small pan, sprinkle the packet over ¼ cup cold water and let it sit for a minute. Then stir over low heat until totally dissolved. Add this into the above mixture, along with the other ¼ cup cold water, and blend in well. Pour mixture into the pie shell. Chill until set. Top with whipped cream, if desired. It’s also delicious with ice cream. This carob recipe makes a really good healthy dessert.

Carob Brownies
 Cream together:
½ cup honey or maple syrup
3 eggs
½ cup oil
Add in order:
3/8 teaspoon salt
½ tsp vanilla
½ cup carob powder
1 cup whole wheat pastry flour (or regular flour)
½ Tablespoon baking powder
Lastly, add in 1 cup chopped nuts.
Bake at 350 F degrees in a greased pan for 25 minutes


Carob Frosting
2 Tablespoons butter
¾ cup non-instant milk
¼ cup carob powder
¼ cup honey or maple syrup
4 Tbspn milk
1 teaspoon vanilla 

Carob Bars
1 c. old fashioned oatmeal
5 tbsp. butter
1 c. boiling water
1 1/2 c. flour
2 tsp. baking powder
2 eggs, beaten
1/2 c. carob chips
1/4 c. honey
1/4 c. molasses 
1/3 c. date sugar
Mix first 3 ingredients and set aside for 10 minutes. Mix remaining ingredients, then add first 3. Put in a 9 x 13 inch pan and sprinkle 1/2 cup chopped nuts and 1/2 cup carob chips over the top. Bake at 350 degrees for 30 to 35 minutes.

Carob Cookies 
3 c. whole wheat flour 
1 tsp. baking soda 
1/2 c. carob powder 
3/4 c. unsweetened applesauce 
3/4 c. molasses 
2 tsp. vanilla 
1/2 c. sunflower seeds
Mix together flour, soda and carob powder. Add remaining ingredients and blend well. Drop by teaspoonfuls onto nonstick cookie sheet. Bake at 350 degrees for 10 to 12 minutes.

Carob Energy/ Breakfast Bars
2 cups bran flakes, crushed (or substitute multi-grain flakes)
2 cups oatmeal 
2 tablespoons wheat germ 
1 tablespoon cinnamon 
1/2 cup plain yogurt 
1 cup applesauce 
1 teaspoon vanilla 
1/3 cup honey or maple syrup 
1 egg, beaten
1/2 cup powder milk 
1 teaspoon baking soda 
1 teaspoon baking powder 
1/2 cup raisins, craisins, or chocolate chips
1 teaspoon orange zest (optional)
Preheat oven to 350°F. Crush cereal, and place in a medium-sized mixing bowl. Add oatmeal, wheat germ, and cinnamon; set aside.In a medium mixing bowl, combine yogurt, applesauce, vanilla, honey, beaten egg, and skim milk powder: mix well to combine. Add baking soda and baking powder to the yogurt mixture. Mix well. Gradually add the cereal and oatmeal mixture to the yogurt mixture and stir well. Add raisins and mix to combine. Scoop a heaping tablespoon of the batter and roll it into a ball. Place onto a non-stick cookie sheet, or lined with baking parchment, and lightly flatten.  Bake at 350°F for 15-18 minutes.
