Mix:
1 cup canned pumpkin (not pumpkin pie mix)
1/2 cup sugar (omit)
1/2 cup unsweetened applesauce
2-3 eggs
1/2 cup milk (or water) (2+ tsp for cookies)
1 Tbs. vanilla
Mix:
3/4 cup whole wheat flour mix
2 tsp. baking powder
2 tsp. cinnamon
1/2 tsp pumpkin pie spice
1/2 tsp. salt
2 Tbs. mini chocolate chips
Combine pumpkin, sugar, applesauce, egg and vanilla and mix well (we’ll call this the WET mixture)
Combine by whisking: flour, baking powder, cinnamon, nutmeg, cloves and salt in a separate bowl (aka DRY mixture)
Dissolve baking soda in milk, then add to WET mixture
Gradually add DRY mixture to WET and mix until just combined
Fold in chocolate chips
Grease cookie sheet and use an ice cream scoop to measure out
Bake for 10-12 minutes until they no longer look wet
Let sit on pan for 2 minutes then remove to a wire rack to cool
For muffins or cake: easiest to pour into a cake dish and cook as a cake. Yummy with cream cheese/ almond or maple extract/ powdered sugar frosting.
