Whole Grain Granola

8 cups old fashioned oats
2 cups millet
2 cups red quinoa (rinsed)
1/3 cup amaranth
1/2 cup flax meal
1/2 tsp nutmeg

1 tsp cinnamon
2 tsp salt

1cup sliced almonds
1 cup pumpkin seeds
1 cup sunflower seeds
1 cup pecans, roughly chopped
1 cup sunflower seeds, roughly chopped
1 cup dried cranberries, apricots, dates, etc

1 cup coconut oil
2 1/2 cups honey
1 T vanilla
2 tsp maple flavoring

Preheat the oven to 300 degrees. Line two baking sheets with parchment paper or silicon baking mats, and set aside.
Combine the dry ingredients in a large mixing bowl. Add the honey and oil (the honey is easier to mix in if you soften it in the microwave), and mix until thoroughly combined.
Divide the granola between the two baking sheets, spreading it into an even layer on each sheet, and bake for 30 to 35 minutes, stirring the granola and rotating sheets top to bottom and back to front halfway through. The granola is done when it’s uniformly deep golden brown.
Let the granola cool to room temperature on the baking sheets. Break apart and store in an airtight container.

Granola Breakfast
1 CUP Greek yogurt (I buy Fage at Costco in their yogurt aisle)  A one cup
serving only has 120 calories and it contains 20 grams of protein!
1/2 cup fresh or frozen berries (I use the frozen three berry mix from
Costco and just put the frozen berries in a warm cup of water for about 1
minute, then drain and pour directly over the yogurt)
1 Tablespoon chopped walnuts/almonds.
1 Teaspoon agave.
Combine all ingredients and enjoy!
